About Me — Plant-Based & Figuring It Out

About this blog:

Hi, I’m Jeff — and I’m figuring this out right alongside you.

A real person on a real plant-based journey. No perfection here — just honest notes from the road.

My story:

I lost 90 pounds. Then I gained it all back…for a 3rd time.

A few years ago, I dropped 90 pounds and wrote a book about it. I was proud of that — and I should be. But injuries forced me to stop exercising and the weight eventually found its way back. That is when I realized I had only scratched the surface of what diet and nutrition actually mean.

I started digging deeper. Books like How Not to Die by Dr. Michael Greger, The China Study, research studies that genuinely surprised me — they all started pointing in the same direction. The evidence for whole-food, plant-based eating is serious. And most of it wasn’t showing up in the conversations I was seeing online.

So I started documenting everything. What I was learning. What surprised me. What I was still confused about. And slowly, this blog became the honest record I wished I’d had when I started.

I’m not a doctor or a registered dietitian. I’m a husband, a dad, and a guy who cares deeply about getting this right — and I think that’s exactly why this might be worth reading.

This isn’t a place for highlight reels. It’s a place for the actual journey — the moments where the science clicks, the meals that didn’t go as planned, and the slow, real progress that happens when you commit to something one day at a time.

What you’ll find here

Real exploration, not curated perfection. Here’s what I’m writing about:

  • The science, made readableI Dig into research on plant-based nutrition — the studies, the findings, and what they actually mean for how we eat day-to-day.
  • What the mainstream is missing. There are gaps in the popular plant-based conversation. I’m trying to name them honestly.
  • Personal notes from the journey. Surprises, setbacks, small wins. The texture of actually doing this, not just thinking about it.
  • Practical food thinking. How to actually eat this way in a real life, with real constraints, without losing your mind.

A few things about me

90 Pounds lost before plant-based was even on my radar not once, twice, but thrice.

The rest of life

By day I work in IT Product management. I’m a systems thinker by nature, which is probably why nutrition research appeals to me — there’s always a bigger picture to map out.

I’m married to a beautiful person who tolerates my food experiments with remarkable grace. We have two young sons who are growing up watching their dad care about what goes on his plate — and I don’t take that lightly.

I also train with isometric and static holds, have a long-standing fascination with martial arts philosophy, and spend more time thinking about food than most people would consider reasonable.

You can find shorter, quicker takes over on Instagram @JeffBites1. This blog is where I go long.

“To master the fundamentals of body and mind through disciplined daily practice — and to document that journey honestly so my sons and others walking the same road have a light to follow.”

— Jeff, that’s the whole point
